So, over the pandemic, I’ve come to realize that I enjoy cooking. I’ve found that it’s a creative outlet that has the ability to really capture my imagination and allows me to be totally immersed. Now, granted it’s not always fun. When you have a busy schedule and a bunch of picky family members all wanting to eat something different, the joys of cooking disappear very quickly. My wife understands this frustration well and I have to admit, it’s new for me and it sucks.
The one area that has little frustration in terms of picky eaters is dessert. This little treat has saved our waistlines. So yummy, easy and we now always have a bunch in a ziplock just sitting in our freezer.
Peanut butter banana bites are a delicious snack to overcome any insatiable sweet craving. Fortunately, they’re also guilt-free and have no added sugar! With just three ingredients, you can have a ready-to-eat sweet and healthy snack in just over an hour. Keep them in the freezer and eat them anytime.
The Greatness of Peanut Butter
Peanut butter offers a great source of protein, magnesium, niacin, vitamin B-6 and a host of other nutrients. Both rich and creamy, the taste is undeniably delicious. The only problem is, you might want to eat it all because it’s just so good! What’s more, it’s an excellent snack to eat after a powerful workout due to its high levels of protein.
The Perfect Sweetness of Banana
Banana is a versatile fruit thanks to its ability to sweeten any recipe while providing a lot of health benefits. Not only is it a great source of potassium — bananas are also high in fibre, vitamin C, vitamin B-6 and various antioxidants and vital micronutrients. The key is to get the perfectly ripe banana to add the ideal amount of sweetness. Whether you eat it on its own or as the base of these peanut butter banana bites, you can’t go wrong.
The Added Protein of Vegan Yogurt
Vegan yogurt is a hit among both vegan and non-vegan adults! Having a dairy-free yogurt option that offers similar nutritional value is highly beneficial. Vegan yogurt is high in fat and protein, and low in sugar. It’s what gives the bites the silky, creamy texture that melts in your mouth. Soy, coconut or almond yogurt — the options are endless. If you want less sugar you can always use a 0% plain yogurt of your choice.
Feel Free to Experiment
Don’t be afraid to add other ingredients to add crunch and extra flavour to your bites! Semi-sweet chocolate chips, walnuts, or cacao nibs can add a little different something for a crunchy and delicious dessert. Remember to mix them in well with the topping to ensure they stay attached to your bites while they freeze.
Recipe:
1 Banana (chopped)
1 Cup Vegan Yogurt (or 0% yogurt)
1 Cup Peanut Butter
1 Tablespoon Cacao (optional)
Directions:
Chop up the banana into 2 cm thick slices, set aside. Mix the vegan yogurt and peanut butter to create a dense mix. Add cacao if desired. Place a large piece of parchment paper onto a pan. Coat the bananas with your mixture and place them on the pan. Freeze for an hour, and transfer to freezer-safe containers. Enjoy!
